LAZY GIRLS FETA PIE

Ingredients

1 x pack filo (approx 450g)

275g Greek yogurt

150ml milk

4 x eggs

200g crumbled feta

150g grated mozzarella

1 or 2 Zucchini (I used 2 medium)

2-3 TBSP EPICURE 3 Onion dip

1-2 Tbsp EPICURE Greek dressing or Lemon Dilly or Chicken Souvlaki

1 tsp EPICURE Minced Garlic

1/4 tsp EPICURE SPG

EPICURE Everything Bagel for topping

TZATZIKI

¾ cup yogurt

¼ cup shredded cucumber

¼ tsp EPICURE Minced Garlic

1 tsp EPICURE Lemon Dilly

1/8 tsp EPICURE SPG

DIRECTIONS

Cut your filo with scissors while folded over the stretch it out with your fingers to separate the strands and set aside. Preheat oven to 180C. Butter your Sautee Pan/baking dish all the way up the sides.

Add some parchment paper to the bottom(optional).

Prepare the filling. Crumble feta well, using 4 in 1 Mandoline grate zucchini into a sieve and squeeze out liquid into the sink by pressing down or squeezing in your hands. Mix yogurt, milk and eggs until smooth and add all of the other ingredients except the filo, give a stir. Add filo in 3 stages and mix really well. (it might seem like it’s not enough liquid but it definitely is just keep stirring).

Pour the mix into your Sautee Pan and bake on middle to low shelf for 35-40minutes or until golden brown.

Prepare tzatziki by mixing all ingredients.

Serve with Greek salad.
