Garlicky Chicken with Herbed Zoodles

Ingredients

1 Tbsp olive oil

2 chicken breasts

Juice from 1/2 lemon

1 tbsp Epicure Minced Garlic

1 tsp Epicure SPG

2 carrots

3 zucchini

1 tsp Epicure Bruschetta or Epicure Pesto

Pumpkin seeds and Sesame Seeds (optional)

2 tbsp chopped parsley(optional)

DIRECTIONS

Wash chicken and cut into cubes. Using 2 in 1 Citrus Press juice your lemon. Whisk juice, SPG and Minced Garlic in 4 C Prep Bowl add chicken. In Epicure’s Wok heat oil, add chicken, cook for 8-10 minutes. Remove from wok.

Wash zucchini, trim ends and peel carrots. Using Epicure Veggie Twist and Spiral Slicer make zoodles.

Place veggie noodles in wok with Bruschetta or Pesto.

Lightly sauté for 2 minutes ( remember zoodles are 95%  water, don’t cook it too long). You might want to start with carrot noodles and then add zucchini.

Plate chicken with zoodles, top with pumpkin and sesame seeds. Sprinkle with chopped parsley.

Serve with a glass of chilled white wine. Enjoy!
