Curried Chickpeas Quinoa Salad
Ingredients
1 Tbsp olive oil
1 C cooked quinoa
1 can chickpeas rinsed and drained
1/2-1 tsp Epicure Curry Seasoning or Mango Curry Dip Mix
1 carrot thinly sliced with Epicure 4 in 1 Mandoline
1 tsp Epicure Pesto Sauce Mix
1/3 C pumpkin seeds
1/2 tsp Epicure Guacamole Dip Mix
Epicure SPG Seasoning to taste
DIRECTIONS
Cook quinoa. Place 1 cup quinoa with 2 cups of water in Epicure Multipurpose Steamer and microwave for 10-12 minutes.
Season chickpeas with Curry Seasoning.
Mix sliced carrot with Pesto Sauce.
Toast pumpkin seeds with olive oil and Guacamole Dip Mix.
Put all ingredients together, flavor with SPG Seasoning, sprinkle with chopped parsley (optional). Serve with a glass of chilled white wine.
