Cream Cheese Swirl Brownies
Ingredients
1 pkg Epicure Fudgy Brownie Mix (Pack of 2)
1⁄2 cup unsalted butter, melted
3 eggs, divided
2 tbsp milk, your choice
1 1⁄2 tsp vanilla extract, divided
1 brick (8 oz/250 g) cream cheese, softened
1⁄4 cup granulated sugar
DIRECTIONS
Preheat oven to 350˚ F. Using basting brush lightly oil Muffin Maker; place on Sheet Pan.
In a large bowl, combine mix and melted butter. Add 2 eggs, milk, and 1 tsp vanilla extract. Stir until well combined. Reserve 1⁄3 cup of batter and set aside. Scrape remaining batter and using Prep Pro Scoop fill in muffin makers; spread out evenly.
In a small bowl, beat cream cheese with sugar. Beat in remaining egg and 1⁄2 tsp vanilla extract until smooth. Pour over batter in muffin makers and smooth out to the edges.
Using 1 heaping tbsp as a guide, dollop reserved brownie batter over cream cheese mixture. Use a butterknife to cut through the batter to make swirls.
Bake, uncovered, 35 min, or until edges are golden and toothpick comes out mostly clean, with a few crumbs on it. Let cool before slicing. Enjoy!
