Cheesy Buffalo Chicken Skillet

Ingredients

Chicken

  • 1 lb chicken breast, cut into bite-sized cubes

  • 1 cup whole cottage cheese, blended until smooth

  • 3/4 packet cheesy buffalo chicken seasoning mix

Skillet & Sauce

  • Butter (for pan)

  • 1 cup chopped onion

  • 2 cups butternut squash, cubed

  • 1 tsp YGY Easy Eats™ Roasted Garlic Aioli

  • Remaining 1/4 packet cheesy buffalo chicken seasoning

  • 2 tbsp tomato paste

  • 1 cup chicken broth

  • 1 can coconut milk

For Serving

  • Cooked brown rice

DIRECTIONS

  1. Marinate the Chicken - In a bowl, combine cubed chicken, blended cottage cheese, and 3/4 of the seasoning mix. Stir well and let marinate for 10 minutes.
    Note: The mixture may look thick or clumpy—this is normal with high-protein sauces.

  2. Cook the Chicken - Heat a large skillet over medium heat. Add the marinated chicken and cook until fully cooked through. Remove chicken from pan and set aside.

  3. Cook the Vegetables - In the same skillet, add butter, onion, butternut squash, roasted garlic aioli, and remaining seasoning.

    Cover and cook over medium-low heat, stirring occasionally, until squash is soft.

  4. Build the Sauce -Return cooked chicken to the skillet. Add tomato paste, chicken broth, and coconut milk. Stir well to loosen and smooth the sauce.

  5. Simmer - Reduce heat to low and simmer until sauce slightly thickens and becomes creamy.

  6. Serve hot over a bowl of brown rice and enjoy.
