Bursting Berry Seed Crackers
Ingredients
½ cup raw sunflower seeds
½ cup raw pumpkin seeds
¼ cup sesame seeds
2 Tbsp ground flaxseed
2 Tbsp chia seeds
2 Tbsp black sesame seeds
¼ cup hemp hearts
¾ cup chopped dried cranberries
2 Tbsp psyllium husk
3 Tbsp Bursting Berry Blend (YGY Easy Eats)
~1 cup water (plus extra as needed for thinning)
DIRECTIONS
Preheat oven to 325°F (165°C). Line a large baking sheet with parchment paper.
In a large bowl, combine all seeds, flax, chia, black sesame seeds, hemp hearts, dried cranberries, and psyllium husk.
Add the Bursting Berry flavouring, then slowly stir in water, starting with 1 cup.
Let the mixtre set up for about 15 minutes. The mixture should be spreadable and pliable, not dry.
If it feels thick, add a little more liquid — a thinner batter makes thinner, crispier crackers.
Transfer mixture to the parchment-lined baking sheet. TIP Run your fingernail around the edges of parchment to create a neat square frame within the baking sheet.
Use a spatula to spread evenly.
Place a second piece of parchment paper on top and roll or press flat until thin.
Peel off the top parchment.
Bake for 35 minutes.
Remove from oven, score into cracker-sized squares using a knife. Flip pieces over.
Return to oven and bake an additional 15–20 minutes, until crackers are dry and crisp.
Let cool completely — they will crisp up even more as they cool.
