Beef & black beans taquitos
Ingredients
10 Corn Tortillas
1 lb ground beef
1 tsp olive oil
½ tsp Epicure SPG
2 tsp Epicure Nacho Cheese Dip Mix
1 tbsp Epicure Guacamole Dip Mix
2 tbsp Epicure Simply Better Baked Beans
1 can bean rinsed
¾ c shredded cheese
1 C cocktail tomatoes
GUACAMOLE
2 avocados
¾ C yogurt /sour cream
½ lime
1 tbsp Epicure Guacamole Dip Mix
CHEESE SAUCE
1 C milk, ½ C milk
1 package Epicure Ooey Gooey Queso Dip Mix
Epicure Black Pepper
Epicure Sea Salt
DIRECTIONS
Bring your frying pan with olive oil to medium heat and start frying ground meat.
Add SPG, Nacho Cheese, Guacamole Dip Mix, stir well and cook for 10 minutes.
Place Ooey Gooey Queso Dip Mix in 4 C Prep Bowl with 1/2 C milk, stir well with whisk, once smooth add another 1/2 C milk. Put in the microwave for 5 minutes, stir well and place in microwave for another 2 minutes.
Wrap tortillas in a clean tea towel and microwave for 2 minutes, makes them more playable. Juice lime with 2 in 1 Citrus Press.
Scoop avocado into blender, add yogurt /sour cream, lime juice and Epicure Guacamole Dip Mix blend well. Set aside.
Add shredded cheese to meat/ beans mix, heat it up and mix well. Using Ground Meat Separator make sure that there are no clumps. Pour ½ of Nacho Cheese Dip into meat mix, reserve the rest for drizzling.
Assemble taquitos.
Place 2 tbsp of mix on warmed up tortilla, roll it up.
Set filled taquitos on ¼ sheet pan lined with 1/4 sheet pan liner.
Place your tray with taquitos in 425 F preheated oven for 12 minutes.
Serve with slices of lime, tomatoes, dollop of Guacamole and Queso Sauce.
