White Hot Chicken Chili
Ingredients
1 tbsp vegetable oil
1 onion, diced
1 tsp Epicure Minced Garlic
1 cup diced celery
2 chicken breasts, cut into cubes
2 Tbsp Epicure Cha Cha Chili Seasoning
2 tsp Epicure Fajita Seasoning
1 Tbsp Epicure Cheese & Jalapeno Mix
2 cups water
1 Tbsp Epicure Chicken Broth
1 can White Kidney Beans - rinsed and drained
Sea Salt and Pepper to taste
1/4 cup plain Greek yogurt
1/4 cup light cheddar cheese, grated
cilantro (optional garnish)
Directions
In a large fry pan or Epicure Wok heat vegetable oil over medium high heat. Add onion and celery and cook for about 4 minutes. Add Minced Garlic. Cook and additional minute. Remove from pan and set aside.
In same pan, add chicken and 1 tsp of chicken broth seasoning, cook till golden brown on all sides.
Return vegetables to pan with chicken, add ALL Epicure’s seasonings, stir for 1 minute.
Add 2 cups of hot water and 2 tsp of Epicure Chicken Broth seasoning. Simmer for 10 minutes.
Add white beans, stir, and cook for an additional 5 minutes.
Divide into bowls, and add a dollop of yogurt, grated cheese and cilantro, if desired.
Makes a great make ahead and freezes well.
Season with Salt and Pepper
