Thai Green Curry

Ingredients

1 - 14 oz can coconut milk

1 package Epicure Thai Green Curry

1 lb chicken – cut into slices or chunks

3 cups mixed vegetable – beans, peas, peppers

1 lime

2 tsp soy sauce – low sodium

Steamed rice or rice vermicelli noodles

Directions

Combine seasoning with coconut milk in a Wok & Glass Lid over medium-high heat. Bring to a boil, reduce heat, and simmer for 2 minutes.

Add chicken and cook for 5 - 7 minutes. Stir in vegetables and simmer for more 2 minutes.

Using a citrus press, squeeze half lime into wok. Add soy sauce, as desired.

TIP: You can substitute chicken with beef, shrimp or vegan protein.
