Lemon Protein Bars and Balls

Lemon Protein Bars and Balls

Ingredients

4 Tbsp. fresh squeezed lemon juice (about 2 lemons)
Fresh lemon zest —about 1/4 tsp
4 Tbsp honey
1 scoop Epicure Protein Powder – Heat Stable
1 1/2 cup coconut—shredded and unsweetened
2 Tbsp Epicure Coconut Lime Sweet Dip

 

Directions

In a small bowl, add protein powder. 
Squeeze juice from lemons using 2 in 1 Citrus Press. 
Add all liquids to powder.  Mix use a whisk to make sure you have no lumps. 
Let sit for 5 minutes. 
Add coconut, Coconut Lime dip and mix well. (Mixture is dry, so if required, add additional honey to bind). 

Roll into balls or double recipe and press into our perfect petites tray.  (TIP: I have found the Dip & Spreader is PERFECT for using with Petite Portion tray.)

Bake at 375 F for 10 minutes until just to golden colour.
