Southern Baked Eggplant Sticks

 
 

Ingredients

2 Japanese eggplants -cut into sticks

4 cups water

1 Tbsp Epicure Sea Salt

1 Package Epicure Southern Baked coating

3 eggs 

1/2 cup finely grated parmesan cheese

Directions

Preheat oven to 400 F

In a large bowl, add water and salt. Stir till dissolved. Add your eggplant sticks and with a plate or bowl set on top weight down eggplant into water. Let sit 30 minutes. 

In the meantime, break 3 eggs and whip till smooth. Set aside.

In a shallow bowl, add 1 package Southern Baked Coating Mix.

 Remove eggplant sticks from water and pat dry with paper towel. (This will allow for egg and mix to stick)

Then, one at a time, add eggplant in to egg, then transfer to coating and toss till all sides are coated.

Place on a Bake and Roll lined baking sheet. 

When all eggplant strips are coated. Move to oven and bake for about 18 - 20 minutes  or untill soft and slightly browned.

Remove from oven place on a plate. 

Optional - sprinkle additional Parmesan and make a Marinara Dipping Sauce
