Eggnog Cheesecakes made in Epicure Perfect Petite Pan

 
 

Ingredients

Follow instructions on package of Epicure Eggnog Cheesecake

1 box Graham Crackers

Prepare 2 Epicure Perfect Petite trays for eggnog mix.

Break Graham crackers at perforations.

This will give you 4 bases. You will need a sharp knife to cut about 5mm off each cracker so it will fit perfectly into petite tray.

Pour your prepared cheesecake mix into Perfect Petite pan. Place in a 325 F pre-heated oven for 30 minutes or until done.

Remove and let cook on a cooling rack.

 Once cool to touch, put tray in fridge to set (about 1 hour). Use a butter knife to pop cheesecakes out of mould.

TO DECORATE:

Make flavoured whipping cream, drop a dollop at one end. Add a small piece of mint.

Sugared Cranberries:

1/2 cup water

1/2 cup sugar

Fresh cranberries

Put in multipurpose pot and cook until sugar is dissolved. Remove from heat and let cool. Add fresh cranberries and let sit in pot overnight to sweeten the berries. The following day, remove cranberries from sugary water. Let drain and dry slightly on a cooling rack. While berries are still slightly sticky, roll in sugar and place these sugared cranberries on your cheesecake to make a festive presentation.
