Yaki Udon Stir fry

Ingredients

1 pkg (227 g/8 oz) rice noodles, such as vermicelli

2 chicken breasts

1-2 tbsp EPICURE Yaki Udon

1 tsp olive oil

1 red bell pepper

2 cups chopped broccoli

1 small carrot

3 tbsp low sodium soya sauce

½ cup peanuts/cashews

DIRECTIONS

Cook noodles in Multipurpose Pot according to package directions. Drain and rinse with cold water. Put aside.

Slice chicken. Heat oil in Sauté Pan over medium-high heat.

Using 4 in 1 Mandoline slice and dice veggies.

Flavour chicken with 1-2 tbsp of Yaki Udon seasoning. Place chicken in the pan and begin frying. Once meat starts to caramelize add veggies. Stir fry for another 5 minutes.

Add cooked noodles, chopped nuts, and soy sauce; toss to combine. Cook for another 5 minutes. Enjoy!

“Yaki” means grilled, broiled, or pan-fried in Japanese.
