Everything Bagel Rugelach with Tomato Jam

Ingredients

TOMATO JAM

2 lb peeled tomatoes

1/2 C brown sugar

2 tbsp balsamic vinegar or apple cider vinegar

2 tsp EPICURE Balsamic Vinaigrette Dressing Mix , Pesto Sauce mix or Marinara Sauce Mix

RUGELACH

2 tbsp EPICURE Everything Bagel

1 C all purpose flour

1/2 C cold unsalted butter, cut into large cubes

1/2 C cold cream cheese, cut into large cubes

1 tsp EPICURE Black Pepper

1/2 tsp EPICURE Sea Salt

EGG WASH

1 egg

1/2 tsp water

pinch EPICURE Sea Salt

DIRECTIONS

In Epicure’s 12 C Multipurpose Pot combine chopped and peeled tomatoes, sugar, vinegar and sauce or dressing mix. Stirring constantly with Epicure Silicone Sauté Spoon, bring to a boil over medium-high heat. Reduce heat to medium-low and gently simmer, stirring often, until thick and jammy - 30 minutes. To test if jam is done, run a spoon along bottom of pot through jam. It is done if no liquid fills in the path.

In a food processor pulse together flour, butter, cream cheese and salt until just combined. Let the processor run until a shaggy dough ball forms. Lightly flour hands and gently form dough into a disc, wrap and refrigerate for 1 hour.

Preheat oven to 350F, have Epicure Sheet Pan lined with silicone liner ready.

On a lightly floured surface, roll dough into 11 inch circle.

Using Epicure 3 in 1 Spatula spread 1/3 C tomato jam over surface of dough, leaving 1/2 inch border. Sprinkle Black Pepper evenly over filling.

Transfer remaining tomato jam into Epicure Perfect Petite and place in the freezer. When frozen solid, pop out of silicone pan and place in Ziploc bags.

Stores in the freezer for up to 3 months.

Using Epicure Prep Pro Chef Knife cut disc into 12 equal wedges. Starting from wide end of each long triangle, roll up and press on pointy end to seal. Place seam-side down on prepared sheet pan. Repeat with remaining triangles. Place them about 2 inches apart. Whisk together water, egg and salt.

Using basting brush, brush surface of Rugelach with egg wash. Lightly sprinkle Epicure Everything Bagel. Bake until browned and flaky, about 25-30 minutes.

Transfer to a wire rack to cool completely.
