Caribbean Meatloaf - Best Ever Meatloaf

Caribbean Meatloaf

Ingredients

1 pkg Epicure Classic Meatloaf

1 lb lean ground beef / pork or turkey

1 egg

2 Tbsp water

1 cup tomato sauce

2 Tbsp sugar

1/4 c white vinegar

1/2 pkg Epicure Pulled Pork Seasoning

1 cup crushed pineapple

2 tsp cornstarch

DIRECTIONS

In a large bowl combine seasoning with 1lb lean ground beef, 2Tbsp water and 1 egg. Mix well till blended. Press meat down in Rectangular Steamer.

Microwave Method: Cook on high for 4 minutes. Remove and let cool slightly cut into 8 slices.

Oven Method: Set oven to 350 degrees: Cook meatloaf for 35-40 minutes or until cooked through.(160 degrees internal temp) Remove and cool slightly. Slice into 8

Sauce: In a larger bowl add crushed pineapple with juice. Add 2 tsp cornstarch, mix well to remove all lumps. Place in microwave and cook for 2 minutes on high to thicken. Add tomato , sugar, vinegar, 1/2 pkg Pulled Pork seasoning. Mix well.

Baste slightly cooled meatloaf with tomato/pineapple sauce. Coat both sided of slices and return to steamer. Pour remaining sauce over and return to cook.

Microwave Method: Cook 2-3 more minutes on high to cook glaze and reheat meatloaf

Oven Method: return to oven and cook 7 more minutes to reheat and set glaze.

Serve with cooked rice and garnish with cut green onions.
