Balsamic Chicken Nourish Bowl

Ingredients

1/2 pkg EPICURE Crispy & Crunchy Coating

1 chicken breast cut into strips

1 tbsp EPICURE Balsamic Vinaigrette Dressing Mix

6 tbsp olive oil

2 tbsp balsamic vinegar

2 cups of spinach

½ cup sliced red cabbage

¼ cup sliced red onion

¼ cup zucchini ribbons/sticks

1 tomato sliced

1 avocado

EPICURE Sea Salt - to taste

EPICURE Black Pepper - to taste

DIRECTIONS

Mix olive oil, balsamic vinegar and Balsamic Vinaigrette seasoning. Pour 1/3 of the Balsamic dressing into 4 cup Prep Bowl, drop in chicken strips. Dredge chicken in crumb mixture to evenly coat using Grip & Grab. Arrange strips in a single layer on cooling rack placed on top of the sheet pan lined with a silicone liner. Bake in 425F oven for 12-15 minutes or until deep golden.

Meanwhile slice and chop veggies using 4 in 1 Mandoline.

Blanch avocado for 10 sec! not longer, and plunge in the ice cold water to prevent from browning.

Arrange veggies in a bowl, top with sliced avocado, pour prepared dressing. Finish with chicken strips.
